Yesterday, John reminded me that there were still a couple of apples in the fridge that needed consuming. Then, while going through the fridge, I found some cheddar cheese that also needed using, as well as the last few slices in a package of bacon. I put them all out on the counter and went hunting.
I turned to Pinterest for inspiration and found it. I came across this recipe for Apple Bacon Quick Bread; there’s only one problem with it. It uses gluten free Bisquick. I don’t use mixes of any kind for my baked goods so I went hunting for something I could use as a base recipe for a savoury quick bread. This recipe for Three Savory Quick Breads provided the base recipe I used for my version, Apple Bacon Cheese Bread.
It all comes together quite quickly and the flavours of this bread are amazingly satisfying. The saltiness of the bacon and the cheddar perfectly offsets the sweetness of the apples and onions. The base batter is more of an eggy batter than a cake-y batter, with only one cup of flour and three eggs. This is definitely a keeper recipe; it passed the John test; with the first bite, he sighed contentedly.
To make this quick bread, the first thing you’ll need do is cut up the sliced bacon into 1″ pieces and fry it until it begins to brown. Drain off the fat and add the diced apples and onions to the browned bacon. Sauté until the apples and onions begin to soften.
While the bacon, onions and apple are cooking, grate the cheddar cheese and make up the base batter. Then, just mix it all up together, pour it into a prepared loaf pan and bake until it’s done.
If you want to make this gluten free, just substitute your favourite gluten free flour blend for the regular flour.
Apple Bacon Cheese Bread
- 4 sliced bacon, cut into 1″ pieces
- 1 medium Granny Smith apple, peeled and diced
- 1 medium sweet onion, diced
- 1 cup unbleached all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon fine sea salt
- 3 large eggs, lightly beaten
- 1 cup plain yogurt
- 1 cup aged cheddar cheese, grated
Preheat oven to 425º F. Grease and flour a 1 quart bread pan. Set aside.
Cut the bacon into 1″ pieces and fry it until it begins to brown (no need to get it crisp). Once the bacon has started to caramelize, drain the fat off and add the diced apple and onion to the frying pan. Sauté until the apples and onions begin to soften. Remove from heat.
In a medium mixing bowl, blend together the flour, baking powder and salt. Mix the grated cheddar cheese into the flour until it is well coated with flour. In another bowl, mix together the eggs and yogurt. Pour the egg/yogurt mixture into the dry ingredients and mix until dry ingredients are moistened. Gently fold in the bacon, apple, and onion mixture until evenly mixed.
Pour batter into prepared pan.
Bake in centre of oven until firm and golden brown (30-40 minutes). Remove from oven. Let cool for 10 minutes. Turn onto a rack to cool to room temperature.
Yield: 1 loaf.
